Today we’re talking about what to do with all of those leftovers and I thought I’d do something a little different. I’ll start by giving you links to a couple of my favorite leftovers recipes and tell you how we handle them in our menu planning, but then…I want your leftovers recipes! That’s right…yours! I thought I’d do a fun impromptu link party. Don’t worry, it doesn’t have to be a new post. Dig around in those archives! Easy as pie (leftover pie?).

OK so first up, I’m going to be honest and tell you that leftovers got wasted a lot around here in the beginning. I ate them as part of my lunches, but I truly, honestly felt guilty at the thought of serving my husband leftovers. I saw it as lazy not to cook him a fresh meal every night. I truly did.
Then I started adding up all the money I was wasting by not eating what we’d cooked. That was sobering. I mean, really, how selfish! There are people out there who don’t have any food and I’m throwing it away? Sad.
Don’t write me off though. I learned the error of my ways.
Now, almost every week, we have a leftovers night. I plan for it. You can see on last month’s plan that we have several leftovers nights filled in from the start:
