This is Part 9 in a series on Menu Planning on a Budget. If you’ve missed anything, start HERE.

Hello everyone!

Today we’re talking about what to do with all of those leftovers and I thought I’d do something a little different. I’ll start by giving you links to a couple of my favorite leftovers recipes and tell you how we handle them in our menu planning, but then…I want your leftovers recipes! That’s right…yours! I thought I’d do a fun impromptu link party. Don’t worry, it doesn’t have to be a new post. Dig around in those archives! Easy as pie (leftover pie?).

Don’t have a blog? No sweat. Leave a comment and share what you do to make sure you aren’t wasting all that tastiness. I’ll feature my favorites this weekend. (It’ll give me something to do when I’m cross eyed from looking at boxes…help a girl out.)

OK so first up, I’m going to be honest and tell you that leftovers got wasted a lot around here in the beginning. I ate them as part of my lunches, but I truly, honestly felt guilty at the thought of serving my husband leftovers. I saw it as lazy not to cook him a fresh meal every night. I truly did.

Then I started adding up all the money I was wasting by not eating what we’d cooked. That was sobering. I mean, really, how selfish! There are people out there who don’t have any food and I’m throwing it away? Sad.

Don’t write me off though. I learned the error of my ways.

Now, almost every week, we have a leftovers night. I plan for it. You can see on last month’s plan that we have several leftovers nights filled in from the start:

I’m even working on a collection of recipes from our leftovers. You can find two of our favorites here:
And now the fun part! Let’s hear from you.
Link party guidelines –
Blog posts should either be your recipe (i.e. something you came up with) OR have a direct link to the recipe you use to reinvent your leftovers.
I’d love it if the recipes were specifically for using up your leftovers, but I’ll take something that uses ingredients in an inventive way – like repurposing that rotisserie chicken from the grocery store. Make sense?
I’d really, really love it if you’d link back to this series by grabbing my button up there and adding it to your post.
