Today we’re talking about what to do with all of those leftovers and I thought I’d do something a little different. I’ll start by giving you links to a couple of my favorite leftovers recipes and tell you how we handle them in our menu planning, but then…I want your leftovers recipes! That’s right…yours! OK so first up, I’m going to be honest and tell you that leftovers got wasted a lot around here in the beginning. I ate them as part of my lunches, but I truly, honestly felt guilty at the thought of serving my husband leftovers. I saw it as lazy not to cook him a fresh meal every night. I truly did.
Then I started adding up all the money I was wasting by not eating what we’d cooked. That was sobering. I mean, really, how selfish! There are people out there who don’t have any food and I’m throwing it away? Sad.
Don’t write me off though. I learned the error of my ways.
